{"id":97,"date":"2010-01-24T16:49:33","date_gmt":"2010-01-24T16:49:33","guid":{"rendered":"https:\/\/www.bktrent.org\/index.php\/2010\/01\/24\/kale-with-carmelized-shallots\/"},"modified":"2017-10-28T20:45:49","modified_gmt":"2017-10-28T20:45:49","slug":"kale-with-carmelized-shallots","status":"publish","type":"post","link":"https:\/\/www.bktrent.org\/index.php\/2010\/01\/24\/kale-with-carmelized-shallots\/","title":{"rendered":"Kale with Carmelized Shallots+"},"content":{"rendered":"<p>From the book: <a href=\"http:\/\/www.terryskitchen.net\/clean-food\/\" target=\"_blank\">Clean Food<\/a>, by Terry Walters.<\/p>\n<p>My niece gave me this book for Christmas &#8211; it is FULL of healthy recipes designed to use what is in season, thus the &#8220;cleaner&#8221; aspect.\u00a0 I was excited to see recipes for vegetables I&#8217;ve never prepared before.\u00a0 We really liked this recipe and I was inspired to create my own, <a href=\"https:\/\/www.bktrent.org\/index.php\/2010\/01\/24\/colorful-kale-with-peppers\/\" target=\"_blank\">Colorful Kale and Peppers<\/a>.\u00a0 Kale is a nice mix between the &#8220;cookability&#8221; of brussel sprouts and spinach.\u00a0 It is quick to prepare, but I don&#8217;t think you risk the sprout&#8217;s bitterness if you overcook the leaves; and they don&#8217;t wilt so dramatically as spinach, so you still have something to fork up and chew.\u00a0 I reduced the amount of oil in the original recipe &#8211; it seemed like too much.<\/p>\n<ul>\n<li>2 bunches kale<\/li>\n<li>6 large shallots<\/li>\n<li>1-2 Tbsp olive oil<\/li>\n<li>1 tsp lemon juice<\/li>\n<li>1\/8 tsp coarse sea salt<\/li>\n<li>freshly ground pepper<\/li>\n<\/ul>\n<p>In a large skillet over medium heat, saute shallots in olive oil for 6-8 minutes or until very soft and caramelized.\u00a0\u00a0 Add lemon juice and saute another 2-3 minutes to brown.\u00a0 Remove from heat and set aside.<\/p>\n<p>Bring large pot of water to boil.\u00a0 Cut and remove dried stems ends from kale and submerge whole leaves in boiling water for 2-3 minutes or until tender and bright green.\u00a0 Remove from heat, drain water and cut leaves into bite-sized pieces.\u00a0 Add kale to pan with shallots and saute 1 minute.\u00a0 Season to taste with salt and pepper and serve.<\/p>\n<p>\u00a0<\/p>\n<p>I served this with gnocchi and used the hot water to cook the gnocchi.\u00a0 Clean and green.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>From the book: Clean Food, by Terry Walters.
