{"id":76,"date":"2010-01-05T00:30:19","date_gmt":"2010-01-05T00:30:19","guid":{"rendered":"https:\/\/www.bktrent.org\/index.php\/2010\/01\/05\/black-bean-and-sweet-potato-chili\/"},"modified":"2010-01-05T00:30:19","modified_gmt":"2010-01-05T00:30:19","slug":"black-bean-and-sweet-potato-chili","status":"publish","type":"post","link":"https:\/\/www.bktrent.org\/index.php\/2010\/01\/05\/black-bean-and-sweet-potato-chili\/","title":{"rendered":"Black Bean and Sweet Potato Chili"},"content":{"rendered":"<p>Variation: <span style=\"color: #800080;\"><span style=\"font-size: large;\">VIKINGS VEGETARIAN CHILI!<\/span><\/span><\/p>\n<p>Use yellow peppers and swap purple potatoes for the sweet potatoes; think of the jalapeno as Favre &#8211; just how much green do you want with your purple and gold?\u00a0 And if you are purely vegetarian, obviously use the veg broth and not chicken &#8212; GO VIKES!<\/p>\n<p><img decoding=\"async\" src=\"images\/stories\/food\/food 002.jpg\" border=\"0\" \/><br \/>\u00b7\u00a0\u00a0 \u00a02\u00a0 tablespoons\u00a0 olive oil<br \/>\u00b7\u00a0\u00a0 \u00a01\u00a0 large yellow onion, chopped<br \/>\u00b7\u00a0\u00a0 \u00a01\u00a0 red bell pepper, cored, seeded, and chopped<br \/>\u00b7\u00a0\u00a0 \u00a01\u00a0 green bell pepper, cored, seeded, and chopped<br \/>\u00b7\u00a0\u00a0 \u00a02\u00a0 jalape\u00f1o peppers, diced and partially seeded &#8211; proportional to how spicy you want it!<br \/>\u00b7\u00a0\u00a0 \u00a02\u00a0 medium sweet potatoes, diced<br \/>\u00b7\u00a0\u00a0 \u00a03\u00a0 large garlic cloves, minced (about 2 tablespoons)<br \/>\u00b7\u00a0\u00a0 \u00a02\u00a0 to 3 tablespoons chili powder<br \/>\u00b7\u00a0\u00a0 \u00a01\u00a0 to 2 teaspoons sea salt<br \/>\u00b7\u00a0\u00a0 \u00a01\u00a0 to 2 teaspoons ground cumin<br \/>\u00b7\u00a0\u00a0 \u00a01\u00a0 teaspoon\u00a0 freshly ground black pepper<br \/>\u00b7\u00a0\u00a0 \u00a01\/4\u00a0 to 1\/2 teaspoon crushed red pepper<br \/>\u00b7\u00a0\u00a0 \u00a01\u00a0 to 2 teaspoons dried basil &#8211; better yet use fresh &#8211; about 1 Tbsp<br \/>\u00b7\u00a0\u00a0 \u00a01\/4\u00a0 to 1\/2 teaspoon dried marjoram &#8211; better yet use fresh &#8211; about 1 tsp<br \/>\u00b7\u00a0\u00a0 \u00a01\u00a0 bay leaf<br \/>\u00b7\u00a0\u00a0 \u00a01\u00a0 (14.5-ounce) can diced tomatoes<br \/>\u00b7\u00a0\u00a0\u00a0 1 32 oz box vegetable or chicken broth<br \/>\u00b7\u00a0\u00a0 \u00a02\u00a0 (15-ounce) cans black beans, I like Kuner&#8217;s SW style with cumin and chili spices<br \/>\u00b7\u00a0\u00a0 \u00a0Juice of 1 lime (about 2 tablespoons)<br \/>\u00b7\u00a0\u00a0 \u00a0Garnishes: chopped fresh cilantro, green onion slices<\/p>\n<p>Heat oil in a heavy large saucepan or Dutch oven over medium-high heat; add onion. Reduce heat to medium, and cook, stirring occasionally, about 10 to 15 minutes or until tender. Add bell peppers, jalape\u00f1o, and sweet potato; cook, stirring occasionally, 5 minutes. Stir in garlic, and cook about 1 minute. Add chili powder and next 7 ingredients; stir and cook 1 minute. Add tomatoes and broth. Simmer, uncovered, about 30 minutes. Stir in beans, and continue to cook 10 minutes. Remove bay leaf, and stir in lime juice.
