{"id":295,"date":"2014-01-31T02:34:30","date_gmt":"2014-01-31T02:34:30","guid":{"rendered":"https:\/\/www.bktrent.org\/index.php\/2014\/01\/31\/moroccan-spiced-meatball-tagine-with-butternut-squash\/"},"modified":"2014-01-31T02:34:30","modified_gmt":"2014-01-31T02:34:30","slug":"moroccan-spiced-meatball-tagine-with-butternut-squash","status":"publish","type":"post","link":"https:\/\/www.bktrent.org\/index.php\/2014\/01\/31\/moroccan-spiced-meatball-tagine-with-butternut-squash\/","title":{"rendered":"Moroccan-Spiced Meatball Tagine with Butternut Squash+"},"content":{"rendered":"<p>Meatballs:<\/p>\n<ul>\n<li>1 slice bread (trim crust perhaps)<\/li>\n<li>(you might need additional bread crumbs &#8211; 1\/2 c or so)<\/li>\n<li>1\/3 c low fat milk<\/li>\n<li>1 lb ground lamb (original recipe was for beef)<\/li>\n<li>1 egg<\/li>\n<li>1\/4 c chopped fresh cilantro<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>1\/2 tsp ground cinnamon<\/li>\n<li>1\/2 tsp ground cumin<\/li>\n<li>1\/2 tsp ground coriander<\/li>\n<li>1\/4 tsp ground ginger<\/li>\n<li>1\/2 tsp freshly ground black pepper, divided<\/li>\n<li>1\/2 tsp kosher salt, divided<\/li>\n<\/ul>\n<p>Stew:<\/p>\n<ul>\n<li>1 Tbsp olive oil<\/li>\n<li>1 large onion, diced<\/li>\n<li>3 garlic cloves, minced<\/li>\n<li>2 cinnamon sticks<\/li>\n<li>1 tsp turmeric<\/li>\n<li>2 c low-sodium beef broth<\/li>\n<li>1 14.5 oz can diced tomatoes in juice<\/li>\n<li>3 c (1&#8243;) cubed butternut squash<\/li>\n<li>1 (5 oz) pkg baby spinach leaves<\/li>\n<\/ul>\n<p>2 c cooked couscous (or quinoa)<\/p>\n<p>Preheat oven to 400.\u00a0 In a large bowl, soak the bread in the milk for 5 minutes.\u00a0 Add the meat, egg, cilantro, garlic, cinnamon, cumin, coriander, ginger, 1\/4 tsp pepper and 1\/4 tsp salt; gently mix to combine.\u00a0 Add bread crumbs if the mixture is too moist to handle.<\/p>\n<p>Using moistened hands and 2 Tbsp for each, roll meat mixture into meatballs.\u00a0 Arrange meatballs on a baking sheet.\u00a0 Place in oven and bake until browned and just cooked through, about 15-20 minutes.\u00a0 Remove and set aside.<\/p>\n<p>Meanwhile, heat the oil in a heavy large pot over medium heat.\u00a0 Add onions; saute until lightly browned, about 10 minutes.\u00a0 Add garlic, cinnamon and turmeric and continue to cook, stirring, for another minute.<\/p>\n<p>Add broth and tomatoes with juice, butternut squash and remaining 1\/4 tsp each salt and pepper.\u00a0 Bring to a simmer and cook until squash is just tender, about 20 minutes.<\/p>\n<p>Add meatballs and spinach and gently stir into the stew.\u00a0 Cook for another few minutes to rewarm meatballs and wilt spinach.\u00a0 Remove cinnamon sticks.<\/p>\n<p>Divide couscous or quinoa among 4 warm serving plates and top with the stew.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Meatballs: 1 slice bread (trim crust perhaps) (you might need additional bread crumbs &#8211; 1\/2 c or so) 1\/3 c low fat milk 1 lb ground lamb (original recipe was for beef) 1 egg 1\/4 c chopped fresh cilantro 2 garlic cloves, minced 1\/2 tsp ground cinnamon 1\/2 tsp ground cumin 1\/2 tsp ground coriander &hellip; <\/p>\n<p class=\"link-more\"><a href=\"https:\/\/www.bktrent.org\/index.php\/2014\/01\/31\/moroccan-spiced-meatball-tagine-with-butternut-squash\/\" class=\"more-link\">Continue reading<span class=\"screen-reader-text\"> &#8220;Moroccan-Spiced Meatball Tagine with Butternut Squash+&#8221;<\/span><\/a><\/p>\n","protected":false},"author":1,"featured_media":0,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[23],"tags":[],"class_list":["post-295","post","type-post","status-publish","format-standard","hentry","category-lamb"],"_links":{"self":[{"href":"https:\/\/www.bktrent.org\/index.php\/wp-json\/wp\/v2\/posts\/295","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/www.bktrent.org\/index.php\/wp-json\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/www.bktrent.org\/index.php\/wp-json\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/www.bktrent.org\/index.php\/wp-json\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"https:\/\/www.bktrent.org\/index.php\/wp-json\/wp\/v2\/comments?post=295"}],"version-history":[{"count":0,"href":"https:\/\/www.bktrent.org\/index.php\/wp-json\/wp\/v2\/posts\/295\/revisions"}],"wp:attachment":[{"href":"https:\/\/www.bktrent.org\/index.php\/wp-json\/wp\/v2\/media?parent=295"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/www.bktrent.org\/index.php\/wp-json\/wp\/v2\/categories?post=295"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/www.bktrent.org\/index.php\/wp-json\/wp\/v2\/tags?post=295"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
