{"id":278,"date":"2013-03-03T18:44:50","date_gmt":"2013-03-03T18:44:50","guid":{"rendered":"https:\/\/www.bktrent.org\/index.php\/2013\/03\/03\/sweet-potato-kale-a-bacon-egg-bake\/"},"modified":"2013-03-03T18:44:50","modified_gmt":"2013-03-03T18:44:50","slug":"sweet-potato-kale-a-bacon-egg-bake","status":"publish","type":"post","link":"https:\/\/www.bktrent.org\/index.php\/2013\/03\/03\/sweet-potato-kale-a-bacon-egg-bake\/","title":{"rendered":"Sweet Potato, Kale &#038; Bacon Egg Bake"},"content":{"rendered":"<p><strong>Prep Time:<\/strong> 15 min<\/p>\n<p><strong>Cook Time:<\/strong> 40 min<\/p>\n<p><strong> <\/strong><\/p>\n<p><strong>Ingredients<\/strong><strong> (8 servings)<\/strong><\/p>\n<ul>\n<li>1 sweet potato<\/li>\n<li>1 bunch kale<\/li>\n<li>1\/2 onion<\/li>\n<li>6 oz bacon<\/li>\n<li>1 cup ricotta cheese<\/li>\n<li>7 eggs<\/li>\n<li>1\/4 cup milk<\/li>\n<li>salt &#038; pepper<\/li>\n<li>1\/2 cup italian cheese blend<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<ul>\n<li>Pre-heat oven to 375 degrees.<\/li>\n<li>Peel and shred the sweet potato.<\/li>\n<li>Thinly slice kale and chop onion.<\/li>\n<li>Chop bacon.<\/li>\n<li>Heat large pan and spray with cooking spray or oil.<\/li>\n<li>Add onions and kale to pan. Saute for 5-8 minutes until kale has wilted.<\/li>\n<li>Set aside.<\/li>\n<li>Heat same pan and add bacon.<\/li>\n<li>Saute about 5 minutes until bacon is starting to brown.<\/li>\n<li>Remove and drain on paper towel.<\/li>\n<li>Combine sweet potato, kale and onion mixture, bacon and ricotta cheese together.<\/li>\n<li>Spread into bottom of 9&#215;13 pan sprayed with cooking spray.<\/li>\n<li>Whisk together eggs, milk, salt and pepper.<\/li>\n<li>Pour over sweet potato mix.<\/li>\n<li>Sprinkle with cheese.<\/li>\n<li>Bake for 35-40 minutes, until top is golden brown.<\/li>\n<li>Can also be made the night before, cover with foil and bake the next morning.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Prep Time: 15 min Cook Time: 40 min Ingredients (8 servings) 1 sweet potato 1 bunch kale 1\/2 onion 6 oz bacon 1 cup ricotta cheese 7 eggs 1\/4 cup milk salt &#038; pepper 1\/2 cup italian cheese blend Instructions Pre-heat oven to 375 degrees.
