Total time: 35 minutes. <\/p>\n<p>Spice paste:<br \/>1\/2\u00a0 teaspoon\u00a0grated lime rind<br \/>2\u00a0 tablespoons\u00a0lime juice<br \/>1\u00a0 to 2 teaspoons sambal oelek (chile paste with garlic)<br \/>1\u00a0 teaspoon\u00a0fish sauce<br \/>1\/2\u00a0 teaspoon\u00a0coriander seeds<br \/>1\/2\u00a0 teaspoon\u00a0turmeric<br \/>3\u00a0 garlic cloves<br \/>2\u00a0 shallots, chopped<br \/>1\u00a0 (1-inch) piece fresh ginger, peeled<\/p>\n<p>Remaining ingredients:<br \/>Cooking spray<br \/>1\u00a0 cup\u00a0light coconut milk<br \/>1\u00a0 pound\u00a0large shrimp, peeled and deveined<br \/>Chopped cilantro (optional)<\/p>\n<p>To prepare spice paste, combine first 9 ingredients in a food processor; process until smooth.<br \/>Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add spice paste to pan; saut\u00e9 1 minute or until fragrant. Add coconut milk and shrimp; simmer 4 minutes or until shrimp are done.
